Cast Iron Tomato Basil Chicken with Quinoa

I simply ADORE basil, and it is basil season right now! I had to find a way to incorporate this into mine and Jon’s dinner routine, but all the while keeping it healthy! This Cast Iron Tomato Basil Chicken with Quinoa is a winner! It is the type of meal to fill your kitchen with delicious scents, and your belly with a satisfying meal!

The key to this recipe is the fresh ingredients. If you have a cast iron skillet, even better! I believe it really packs an extra punch using this pan to saute the chicken and combine your flavors, but of course, a regular skillet will suffice as well!














CAST IRON Tomato Basil Chicken with Quinoa

  1. Fresh Basil
  2. One Pound Chicken Tenderloins/Breasts
  3. 12-15 Cherry Tomatos [Purchase one pint]
  4. 4-6 Cloves Garlic
  5. 2 Handfuls Spinach
  6. Olive Oil
  7. Salt & Pepper
  1. Chop 4-6 [your preference] garlic cloves
  2. Chop one handful fresh basil
  3. Slice your dozen cherry tomatoes into thirds
  4. Rough chop your spinach
  1. Cook Quinoa to directions on package in separate pot [it takes a bit!]
  2. Oil up your cast iron
  3. Once hot, lower to medium, add all chicken, and a tiny bit of the garlic you chopped [1/2 a clove will do!]
  4. Also add a bit of the basil to the pot, you will continue this process.
  5. Simmer up your chicken, adding a bit more oil if need be, but not too much.
  6. Keep adding more and more of the garlic and basil until you have used about half of what you chopped.
  7. Once chicken is cooked and gained a beautiful brown color, add in the rest of your fresh ingredients
  8. [tomatos, spinach, basil, garlic]
  9. At this time, add a bit of salt and pepper to the pan
  10. Simmer all together until spinach and basil are cooked, and the aromas of the basil are coming through.
  11. At this time, add the quinoa
  12. Stir with wooden spoon [in effort to not crush the quinoa or tomatos]
  13. Allow to simmer additional five minutes.
  14. SERVE!
