Tacos and anything burrito related will ALWAYS be my favorite go-to-meal. But I like to put a spin on things. Mexican Stuffed Peppers are a combination that I dreamed up to make myself feel better about eating tacos! They are DELICIOUS and get this.. good for you! I love peppers in general, so this dish was basically made for me. I opted to use Green, but you can use any color pepper you desire! Red, Orange, Yellow, it all works the same!
This is how I set up the peppers, and then stack the beans in!
So, childhood favorites, we all have them, right? This pepper steak has got to be my absolute favorite. My mom has made this for most of my life, but I have never taken it upon myself to cook it myself! But, as per Jon’s request, I did… and WOW. Am I glad! It was super easy, and just simply, DEVINE. Adobo Chicken with Salsa Verde is on the menu today, and it was DELICIOUS! I am a through and through lover of all things Spanish, Mexican, and Peruvian so this dish was just wonderful. It was also a lot of tinkering to get the salsa verde exactly how I wanted it! [Not too spicy, not bland] But I think it came out exactly how I had envisioned!
